In large nonstick skillet heat oil over medium-high heat. Sauté
onions and garlic until soft, about 10 minutes; cool slightly and transfer
to large bowl. Add all remaining ingredients and mix thoroughly. Place
mixture in a 9" x 4 1/2" x 2 1/2" loaf pan and
bake in a 350° F. oven for 1 1/2 hours. Remove from the oven
and allow to rest 10 minutes before removing from pan. Slice to serve
warm, or wrap well and refrigerate for sandwiches.
