This hearty and quick to prepare tomato fennel sauce works
equally well on pork chops or tuna steaks. This recipe
is part of one of our Fast Frugal and Fabulous meals.

1 pound pork chops
OR
1 pound tuna steaks
salt and pepper to taste
Caramelize
fennel and shallot or onion in 2 T olive oil. Add garlic and cook for
about one minute. Add tomatoes, rosemary, oregano and salt and pepper
and simmer
for ten to fifteen minutes.
Grill or pan fry the pork chops or tuna steaks until done to your liking.
Spoon fennel sauce over meat and serve.
