Pork Chops or Tuna Steaks in Fennel Tomato Sauce

This hearty and quick to prepare tomato fennel sauce works equally well on pork chops or tuna steaks. This recipe is part of one of our Fast Frugal and Fabulous meals. Follow this link for the rest of the menu.

1 pound pork chops
OR
1 pound tuna steaks
salt and pepper to taste

Sauce
1 fennel bulb, thinly sliced
2 shallot or 1 half small onion, thinly sliced
3 cloves garlic, minced or pressed
2 T olive oil
1 14 oz. can tomatoes
3/4 tsp. dried oregano
1/2 tsp. dried rosemary
salt and pepper to taste

Serves 2

Caramelize fennel and shallot or onion in 2 T olive oil. Add garlic and cook for about one minute. Add tomatoes, rosemary, oregano and salt and pepper and simmer for ten to fifteen minutes.

Grill or pan fry the pork chops or tuna steaks until done to your liking. Spoon fennel sauce over meat and serve.
