Maple Mustard-Glazed Pork Roast  

This recipe, from the National Pork Council, makes an elegant meal, anytime you need to "cook to impress" yet it's very easy to prepare. Follow this link to learn more about Pork as well as lots more pork recipes

2-pound boneless pork loin roast
2/3 cup maple syrup
3 T Dijon-style mustard
2 T cider vinegar
2 T soy sauce
Salt and pepper, to taste

Serves 6
Preparation Time: 10 minutes
Cooking Time: 60 minutes

Stir together maple syrup, mustard, vinegar, soy sauce, salt and pepper. Spread evenly over pork roast and place in shallow pan. Roast pork in a 350° F. oven until internal temperature, measured with a meat thermometer, reaches 160° F., about 45 minutes to 1 1/4 hours. Remove roast from oven and let rest 10 minutes before slicing to serve.
