Pasta with Grilled Veggies and Smoked Salmon

Even though Donna came up with this recipe as part of an article she did for us on RV Cooking without Hookups, it's also delicious prepared at home or over a campfire or any time you get the opportunity to cook outdoors.

 

cooked pasta for 2 people (follow link for Donna's precooking instructions)
1/2 pound prepacked smoked salmon (or other fish or ham)
selection of veggies – pick 2 or 3 from this list:

  • zucchini
  • sweet bell peppers
  • onions
  • eggplant

oil and vinegar salad dressing (any kind)
1 small fresh tomato, chopped
1/3 cup grated parmesan cheese

atkins diet, low carb recipes

Serves 2

Prepare a medium grill.

Slice veggies. Dip into the salad dressing and grill until soft, turning once.

Heat the pasta in the microwave. Arrange pasta, 1/2 the grilled veggies and 1/2 the salmon (flaked) on a plate. Sprinkle with chopped tomato and parmesan cheese.
