Archie's Quick Corn Pone Pie

Archie from Macon, Georgia shares his down-home and tasty casserole with Camper's Corner. He suggests trying it several ways: with ground beef or turkey or a combination of both. Make a crisp side salad and the meal's ready to serve.

1 lb. lean ground beef, turkey, or combination of both
1 med onion, chopped
1/2 tsp. cumin
2 tsp. chili powder
1 tsp. Worcestershire sauce
28 oz. can diced tomatoes , undrained
15 oz. can kidney beans , undrained
salt to taste

8 1/2 oz. package corn muffin mix

Serves 4

Preheat oven to 450° F.

Prepare batter following directions on the package of corn muffin mix. Set aside.

In a large skillet, brown ground meat together with onions. Add seasonings, tomatoes and beans. Cover and simmer 15 minutes.

Pour meat mixture into a 2 1/2-quart baking dish, top with cornbread batter spread almost to the edges of the pan. Bake for 20 minutes or until cornbread is done.
