Beef With Noodles In Dijon Sauce

This satisfying, entreé is very quick to prepare. You can have it on the table in under a half hour. This recipe is part of one of our Fast Frugal and Fabulous meals. Follow this link for the rest of the menu.

6 oz. egg noodles
3/4 - 1 lb. beef sirloin (cut into one inch cubes)
4 green onions, finely chopped
2 T fresh parsley, finely chopped
4 T sour cream
3 T plain yogurt
2 1/2 tsp. dijon mustard
1/2 tsp. black pepper
salt to taste

Serves 2

Cook noodles according to package directions. Drain.

Season beef cubes with salt and pepper to taste and cook in a hot skillet till browned to your liking. Add the green onions to the skillet about two minutes before your beef will be done.

Combine sour cream, yogurt, dijon mustard, parsley and salt and pepper till well blended. Heat yogurt mixture in the pasta pot, over medium heat. Add the drained pasta and cooked beef, stir and serve.
