This versatile marinade can be used with most any kind of food. Use white wine for chicken, fish or vegetables. Use red wine for beef, lamb or even venison. I especially like to use the marinade with food that is going to be grilled over an open flame. Want to lower the fat and calorie content (not that marinades like this add that much anyway)? Use a higher ratio of wine to oil. Don't be afraid to play with the recipe. |
| Ingredients: |
3/4 cup red or white wine
2/3 cup olive oil 1/3 cup red or white wine vinegar 2 tablespoons garlic, minced or pressed 2 tablespoons chopped fresh basil 2 teaspoons fresh oregano 3-4 sprigs fresh thyme 1 teaspoon fresh rosemary |

Makes about 2 cups
Mix all ingredients together and use to marinate meats, fish or vegetables. |
