Famous Greek Salad

An old-time favourite salad infused with the richness of creamy feta cheese and the sharp, crisp tang of black olives.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium onion sliced into rings
  • 1 tablespoon white wine vinegar
  • Seasoning
  • 4 large sliced tomatoes
  • 1/2 cucumber, peeled and diced
  • 12 black, pitted olives
  • 100g (4oz) Feta cheese, cubed

Directions

  1. 1. Place the raw onion into a salad bowl along with the vinegar, oil and a small pinch of salt and pepper.  Mix the ingredients together.
  2. 2. Leave to stand for 50 minutes so as the onion softens.
  3. 3. Toss in the cucumber, tomatoes, olives and cheese.
  4. 4. Serve immediately
