Recipe for Egg Salad Stuffed Tomato. A stuffed tomato makes a quick and easy, nutritious lunch. This recipe is also a great way to use leftover Easter Eggs.
Ingredients
- 6 hard boiled eggs, peeled
- 1/4 cup mayonnaise (or light mayonnaise)
- 1 teaspoon lemon juice
- 1/2 teaspoon Dijon mustard
- 1/4 pound arugula
- salt and pepper to taste
- cayenne pepper to taste (optional)
- 4 large tomatoes
- lettuce leaves for garnish
Directions
- Finely chop eggs and stir in remaining ingredients. stuff into the hollowed tomatoes. Serve on a large lettuce leaf.
