Here's a good recipe for a basic rice pudding, American
comfort food at its finest.
1/2 C uncooked rice
3 C milk
1/4 C sugar
1/c C raisins
1/2 tsp. lemon or orange zest,
grated
1/2 tsp. cinnamon
1/8 tsp. nutmeg
whipped cream (optional)
Serves 4
Preheat oven to 350°F.
Combine all ingredients in a 2 quart oven-proof casserole or baking
dish. Bake for about 2 1/2 hours or until the rice is tender and
all the milk has been absorbed. Stir occasionally during cooking
time.
Serve warm or chilled. Top with whipped cream if desired.
