The recipe, text and photo below are reprinted with permission from Absolutely Avocado by Geraldine Duncann (2006 Rio Nuevo Publishers).

If you thought guacamole was the extent of what you could do with avocados, then you really need this book. Author Geraldine puts avocados to innovative use for everything from appetizers, soups and salads to entrees and even desserts. If you love these tasty and healthy fruits (yes avocados are technically a fruit, not a vegetable), you won't want to miss this one.

This dish is deliciously different and a wonderfully light dessert to serve after an elegant meal -- and it's easy too.

1/2 avocado, sliced
1/2 pear, sliced
1-2 tablespoons crumbled blue cheese
port wine
freshly ground black pepper
1 large strawberry (optional)

Arrange alternating slices of avocado and pears on a dessert plate. Sprinkle with crumbled blue cheese. Drizzle a bit of port wine over all and top with a few grindings of pepper. You might even add a beautiful big strawberry with its stem still on.
