Mint Brownies/Brownie Mix

Note from Cheri:
Is there anything better in the world than freshly baked brownies? Hilde Schneider-Mott of the Single Momz website shared the recipe with us. Hilde likes to place 2 cups of the dry mixture into a decorative jar and add a 6-ounce bag of mint chocolate chips. Enclose this recipe and you've got a wonderful gift!

You can visit the Single Momz website at www.singlemomz.com.

Dry Mixture:
5 C sugar
8 oz. can unsweetened cocoa
3 C flour
1 T salt

Brownie Recipe:
2 C dry mixture
1/3 C melted butter
2 lg eggs, slightly beaten
2 T water
1/2 tsp. vanilla extract
6 oz. package of mint chocolate chips, melted and cooled

Note:
The first set of ingredients are for the brownie mix you can make ahead of time. The yield is 10 cups, which is enough for 5 gift packages and can be stored, room temperature in an airtight container for up to 6 months. The second set of ingredients is for the individual batches of brownies, and is the recipe you should print out and give with the mix.

Preheat oven to 350° F. Lightly grease a 8" square pan.

Carefully measure dry mixture like flour. Combine with the rest of the ingredients. Spread evenly in pan. Bake for 25 to 30 minutes.
