Pound Cake

Here is a classic recipe that can be used for a bariety of purposes. Serve it plain, tops with fruit or ice cream or use it in a variety of recipes. One of my favorite ways to use Pound Cake is in a trifle, a simple yet impressive dessert that feeds a big crowd (follow link for recipe).

1 lb. butter
1 lb. (4 cups) sifted cake flour
10 eggs, separated
1 lb. (2 cups) sugar
1 teaspoon vanilla

 

Makes 2 Loaves (8X4 inches)

Preheat oven to 325°F. Grease and flour 2 loaf pans.

Beat egg whites until stiff peaks form, set aside.

Cream butter until fluffy. Mix in flour until mixture is mealy. Set aside.

Beat egg yolks, sugar and vanilla until thick and fluffy. Mix in butter and flour mixture gradually, beating thoroughly. Fold in beaten egg whites and beat for 3-5 minutes. Pour batter into prepared pans and bake for about 1 1/4 hours or until tops are golden brown and cake tester comes out clean.
