Easter Peeps Cupcakes

kid's cookingNote from Cheri:
This recipe was given to us by our 7 year old guest chef Beau, who has been cooking since he was 2. Beau and his mom (the editor of the Frugal Moms website) like to come up with fun, inexpensive things to make in the kitchen. This is a quick and easy way to decorate Easter cupcakes, using that classic Easter favorite, Marshmallow PeepsŪ.You might even want to take some to school for the class!

You can visit Beau's Mom's website, Frugal Moms, at http://www.frugal-moms.com.

Bake cupcakes and frost.

Follow this link for instructions on colring the coconut green.

Sprinkle colored coconut on top of frosted cupcakesm and place a Peep® in the center. Add a few jelly beans around the Peeps®, so they look like eggs.

Another option is to pipe a "nest" of green icing to encircle the top and place a Peep® in the center. Sprinkle with colored sprinkles for a finishing touch.
