Cranberry Spinach Salad with Warm Honey Dijon Bacon Dressing

Recipe for Spinach Salad with warm Cranberry Bacon Dijon Dressing. This recipe makes a great salad for Thanksgiving, or any time you want to make the salad course special.

Ingredients

  • 6 ounces package of salad spinach
  • 1/2 cup sweetened dried cranberries
  • 4 thin slices of red onion
  • Dressing:
  • 4 slices bacon or turkey bacon, cooked crisp and crumbled
  • 1/2 cup plain or orange-flavored honey
  • 1/2 cup lime juice
  • 2 tablespoons Dijon mustard

Directions

  1. Wash and clean spinach. Divide evenly among 4 salad plates. Top each with 2 tablespoons sweetened dried cranberries and onion slices.
  2. Dressing -- Makes 1 Cup
  3. Combine dressing ingredients in a small glass mixing bowl using a wire whisk. Heat in the microwave on HIGH for 1 minute or until warm. Pour over salad and toss.
