Recipe for Chinese Chicken Salad or Turkey Salad. Here's a great way to use leftover cooked chicken or even leftover Thanksgiving turkey.
Ingredients
- 12 ounces cooked, shredded chicken or turkey
- 10 cups torn romaine lettuce
- 1 cup fresh bean sprouts
- 4 green onions, thinly sliced
- 1 cup crispy chow mein noodles
- 1 small can mandarin oranges, drained
- 4 tablespoons toasted slivered almonds
- Dressing:
- 3 tablespoons rice vinegar
- 3 teaspoons salad oil
- 2 teaspoons sesame oil
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon sugar
Directions
- Prepare dressing by combining vinegar, oils, salt, pepper and sugar until well combined. Toss the salad ingredients in a large bowl and toss with the dressing just before serving.
