Recipe for Chicken and Cantaloupe Salad. Here's a great fruit and chicken salad that makes a perfect light healthy summer entree.
Ingredients
- 1 small cantaloupe
- 6 cups cubed, cooked chicken
- 2 cups chopped celery
- 2 cups seedless green or red grapes
- 3/4 cup sliced water chestnuts
- 1/3 cup finely chopped green onions
- 1/2 cup sour cream
- 1/2 cup plain yogurt
- 2 teaspoons curry powder
- salt and pepper to taste
Directions
- Cut melon in half, and remove seeds. Use a melon baller to scoop out melon balls and place in a large salad bowl. Add chicken, celery, green onion, grapes and water chestnuts.
- Mix together, sour cream, yogurt, and curry powder. Toss with salad. Season with salt and pepper to taste.
