Recipe for Cantaloupe Melon Lime Pie, also known as Seafoam Pie. This unusual recipe uses cantaloupe, which is technically a vegetable and not a fruit. Who knew?
Ingredients
- 1 tablespoon unflavored gelatin
- 1/2 cup sugar
- 1/4 teaspoon salt
- 3 slightly beaten eggs
- 1/2 cup lime juice
- 1/4 cup water
- 1 teaspoon grated lime zest
- 2-3 drops green food coloring
- 3 cup low-fat whipped topping, thawed
- 1-1/2 cup cantaloupe cubes (about 1/2)
- 1 (9-inch) deep-dish pastry shell, homemade (follow this link for recipe), frozen or refrigerated
- low-fat whipped topping, for garnish
- 1/3 cup sliced toasted almonds for garnish
Directions
- Top with a ring of low-fat whipped topping and garnish with toasted almonds.
