Recipe for Campfire Baked Beets. These prepared beets are also good when cold or added to green salads.

Ingredients

  • 1 beet per person
  • small pat butter per serving

Directions

  1. Wash beets, dry, and trim top. Make small X in top of beet (where the greens were.) Place on a sheet of aluminum foil and add butter pat. Wrap in one to two layers of and put on coals of fire or on barbecue. Turn every 10 minutes or so. A medium sized beet will take approximately 45 minutes to bake. Remove from coals, open packet slowly to allow steam to escape.
