Cinnamon Pecan Muffins

Hilde Schneider-Mott of the Single Momz website shared the recipe with us. Hilde likes to place all the dry ingredients for these muffins into an interesting jar, like an old mason jar with the flip-type lids. Add the following recipe and an antique muffin tin, or a new one with heart shaped cups and you have a gift that's a real winner.

1 1/2 C flour
1/2 C sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 C chopped pecans
1 egg
1/2 C milk
1/4 C vegetable oil

Makes 9 Muffins

Preheat oven to 400° F and grease 9 muffin cups. Half fill the remaining cups with water.

In a large bowl, mix the dry ingredients with a wire wisk. Mix in the pecans. In a small bowl, combine the wet ingredients. Add to the large bowl. Mix only until mixture is moistened. Fill muffin cups 1/2 full with batter. Bake for 20 to 25 minutes.
