Give your morning blueberry muffins a boost of nutrition with flax, brown rice flour and soy milk. This Blueberry Flax Bran Muffin recipe is a healthy spin on traditional blueberry muffins.
Ingredients
- 1/2 cup brown rice flour
- 1/2 cup flax meal
- 1/3 cup of oat bran
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/3 cup soy milk
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup of agave syrup
- 1 cup blueberries
Directions
- Preheat oven to 350 degrees.
- Combine first 6 ingredients in a mixing bowl, set aside.
- Combine next 4 ingredients in a small bowl and mix well; add to the dry ingredients, stir well and then stir in blueberries
- Bake in muffin pan lined with baking cups for 25 minutes.
