Recipe for Blue Moon Diner's Patty Melt. Serve this retro sandwich hot with a nice side dish like baked beans or potato salad.
Ingredients
- 1 pound lean ground beef
- 1/2 teaspoon salt
- dash of black pepper
- 3 teaspoons vegetable oil
- 1 large thinly sliced sweet onion (the milder the better)
- 1 tablespoon butter
- 8 slices thick rye bread
- 4 slices Monterey Jack cheese (thick sliced if possible)
Directions
- 1. In a mixing bowl, combine beef, salt and pepper.
- 2. Form into 4, half inch thick patties and fry in skillet about 4 minutes on each side. Set aside and keep warm.
- 3. Add oil to skillet and saute onions until transparent. Be careful not to brown or they may become bitter.
- 4. Drain any oil out of skillet.
- 5. Butter one side of 8 slices of bread and grill, Butter side down, in skillet.
- 6. Place 4 slices of bread on a heat proof pan, Butter side up and top each with a burger patty, sauteed onions, and a slice of cheese.
- 7. Broil sandwiches 5 inches from heat for about 2 minutes. Cheese should be melted but not runny.
- 8. Top each with remaining slices of bread. Serve hot with a nice side dish like baked beans or potato salad.
