Diabetic Friendly Buttermilk Nectarine Blush

This diabetic friendly recipe was given to us by Marilyn Helton, author of our Diabetic Dining on Fabulous Foods column.

Marilyn always says, "A diagnosis of diabetes does NOT have to be a culinary death sentence." And she's got the recipes to prove it. Garnish with a dollop of light non-dairy whipped topping.

1 quart low-fat buttermilk
4 large nectarines, chilled, peeled & cut into pieces
1/4 cup brown sugar

fresh strawberries for garnish

Serves 8

Combine all ingredients in blender container, blending until the nectarines are puréed. Serve in chilled glasses, garnished with diced, fresh strawberries.
