French Style Hot Chocolate

This rich hot chocolate is full of spicy flavor. The prefect thing to warm a crowd after skating, sledding or skiing. You might even want to put some in a Thermos® to take along.

4 oz. unsweetened chocolate
4 C milk
3/4 C half and half
1/2 C sugar
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1/4 tsp. ground allspice
1 tsp. vanilla extract
1/2 tsp. almond extract
1/2 cup heavy cream, whipped for garnish

Makes 5 Cups

Melt chocolate in 1 cup of milk, over low heat, stirring constantly. Gradually add remaining milk and half and half, followed by remaining ingredients, except extracts. Cook over medium heat, stirring constantly, until completely heated. Serve topped with whipped cream and sprinkled with additional nutmeg.
