Recipe for Betty Lou's Classic Rice Pudding. You’ll swear it tastes just like the way Mama makes it.

Ingredients

  • 4 cups scalded milk
  • 2 cups long grain rice
  • dash of salt
  • 1/2 cup raisins (optional)
  • 1 cup evaporated milk or heavy cream
  • 2 slightly beaten eggs
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • dash of cinnamon
  • dash of nutmeg
  • whipped cream

Directions

  1. 1. In a double boiler mix together milk, rice, salt and raisins.
  2. 2. Simmer over medium-high heat about 20 minutes. Stir occasionally.
  3. 3. In a bowl, use a wire whisk to beat together evaporated milk or cream, eggs, sugar, and vanilla. Stir into rice mixture.
  4. 4. Cook, stirring constantly, 4 or 5 minutes more until thickened.
  5. 5. Pour into a large serving dish and sprinkle with cinnamon and nutmeg.
  6. 6. Spoon into individual dessert dishes and garnish with whipped cream.
