Recipe for Baked Breakfast Burritos. A hearty, inexpensive breakfast the entire family will love.

Ingredients

  • 12 eggs
  • 3/4 cup chunky salsa (see recipe link below)
  • 10 medium flour tortillas
  • 1 can (4 ounces) chopped green chiles
  • 1 cup grated Cheddar cheese

Directions

  1. Preheat oven to 350° F.
  2. In a frying pan, scramble eggs and salsa together until firm but not dry.
  3. Heat the tortillas in the microwave until softened.
  4. Put a spoonful of egg mixture in the middle of each tortillas. Roll up tortilla and place in a greased 9X13 inch pan. Sprinkle with green chiles and cheese. Cover and bake 15 minutes.
  5. Variation: Cook and crumble spicy sausage into the scrambled eggs for a heartier breakfast.
