Recipe for Backpacker Bars. These bars are so good, you'll be looking forward to your next hike or camping trip just so you can make them.
Ingredients
- 1 cup butter
- 1 1/2 cups brown sugar
- 1 cup quick cooking oats
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 1/2 cup wheat germ
- 4 teaspoons grated orange zest
- 4 eggs, lightly beaten
- 2 cups sliced almonds
- 1 cup chocolate chips
- 1 cup chopped raisins
- 1/2 cup shredded coconut
Directions
- Cream butter with 1 cup brown sugar. Stir in oats, wheat flour, white flour, wheat germ, and orange zest. Press mixture into bottom of an ungreased 9 x13\" baking pan.
- Combine eggs, almonds, chocolate chips, raisins, coconut (or whatever mixture you decide to use) and remaining 1/2 cup brown sugar. Mix gently, but thoroughly. Pour over butter mixture. Spread evenly. Bake 30-35 minutes and cool before cutting into bars.
