Ingredients
- asparagus that has been trimmed, steamed until crisp-tender and completely chilled
- Vinaigrette:
- 1/2 cup of freshly squeezed lemon juice
- 1/2 cup of extra virgin olive oil
- 1/2 teaspoon Dijon mustard
- 1 tablespoon finely minced shallots,
- 1 tablespoon minced fresh parsley
- salt and pepper to taste.
Directions
- Mix all vinaigrette ingredients together and chill. Pour over cooked, chilled asparagus just before serving.
