Recipe for Asparagus with Lemon Vinaigrette. This is a light and refreshing summer side dish. Since it's served chilled, it's also a perfect picnic or brown bag lunch addition.

Ingredients

  • asparagus that has been trimmed, steamed until crisp-tender and completely chilled
  • Vinaigrette:
  • 1/2 cup of freshly squeezed lemon juice
  • 1/2 cup of extra virgin olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 tablespoon finely minced shallots,
  • 1 tablespoon minced fresh parsley
  • salt and pepper to taste.

Directions

  1. Mix all vinaigrette ingredients together and chill. Pour over cooked, chilled asparagus just before serving.
