Author Notes: These big, soft chocolate cookies are a favorite of kids of all ages.
Ingredients: 1/2 cup shortening
1 3/4 cups flour
1 cup sugar
1/2 teaspoon baking soda
1 egg
1/2 teaspoon salt
3/4 cup buttermilk
1/2 cup unsweetened cocoa powder
2 teaspoons vanilla

1 cup chopped walnuts or pecans (optional)
Instructions: Preheat oven to 300° F. Lightly grease a cookie sheet or line with parchment paper.

Mix dry ingredients together.

Cream sugar and shortening, beat in eggs, buttermilk and vanilla. Mix in nuts, if desired.

Place rounded tablespoonfuls of dough on prepared baking sheets. Bake for 8-10 minutes. Cool on baking sheet for 3-5 minutes before moving to a wire rack to cool completely.
