This is a sure way to get the kids (or even yourself) to eat a healthy breakfast. Just make the parfaits the night before and store, covered, in the fridge. This breakfast is so delicious, you can even get away with serving it as a healthy dessert. Don't be afraid to get creative and layer in more fruits, nuts and filling for color, flavor and textural variety. The amount of ingredients you will need will depend on the number of parfaits you are making. Chef Harry Schwartz developed this quick, easy, healthy and tasty breakfast recipe for the National Watermelon Promotion Board, who shared it with us. |
