Tomato Fennel Sauce

Author Notes: Here's an easy to make tomato sauce with a unique twist -- the mild -- ever so slight after cooking -- licorice flavor of fennel.
Ingredients: 1 fennel bulb, thinly sliced
2 shallots or 1 half small onion, thinly sliced
3 cloves garlic, minced or pressed
2 tablespoons olive oil
1 can (14 ounces) tomatoes
3/4 teaspoon dried oregano
1/2 teaspoon dried rosemary
salt and pepper to taste
Instructions: Caramelize fennel and shallot or onion in 2 tablespoons olive oil. Add garlic and cook for about one minute. Add tomatoes, rosemary, oregano and salt and pepper and simmer for ten to fifteen minutes.
