Author Notes:

Time and/or budget conscious cooks will love this unique collection of recipes using that supermarket and convenience store staple -- ramen noodles. Author Toni Patrick takes this simple food to creative new heights -- it's not just for soup anymore (although, to be sure, you'll find creative soup recipes here too).

This is not gourmet food, but rather quick, easy and hearty meals that kids and adults will like. There are 101 thrifty recipes in all.

Ingredients: 2 packages ramen noodles, any flavor, with seasoning packets
2 tablespoons butter
6 eggs, beaten
1 cup chopped ham
1/2 cup onion
1/2 cup chopped green bell pepper
1/2 to 1 cup grated Swiss cheese
Instructions: Cook noodles in water according to package directions and drain. Add seasoning packets.

In a frying pan, melt butter, and then add beaten eggs. Fold in noodles and remaining ingredients. Cook until light brown.
