Author Notes: These zesty sausage balls are the hit of a party. And since they freeze well, it's a good idea to have a bag of them in the freezer for unexpected guests or l ate-night snacks. Before freezing, test-bake a ball to see if it comes out round; if it goes flat, add a little more baking mix.
Ingredients: 1 pound breakfast sausage
4 cups boxed baking mix
4 cups shredded Mexican style cheese
2 tablespoons water
2 teaspoons garlic
pepper salt or to taste
2 dashes of hot sauce
Instructions: Makes 50 Sausage Balls

1. Preheat oven to 325°F. Coat a baking sheet with nonstick cooking spray and set aside.

2. Cook the sausage in a large skillet over medium-high heat until no longer pink, 8 to 11 minutes. While cooking, break up larger pieces into crumbles. Drain well and pat off excess far with paper towels.

3. Combine the remaining ingredients in a large mixing bowl. Add the sausage. Roll into tablespoon sized balls. Place on a baking sheet.

4. Bake the sausage balls for 10 minutes. Roll the balls over, and bake 10 minutes longer or until golden brown. Serve hot with toothpicks.
