If you think it takes too much time and effort to cook vegan, Nava Atlas has just taken away your last excuse. Her innovative recipes put tasty vegan fare on the table in 30 minutes or less! Nava has long been one our favorite vegetarian and vegan authors, but she’s outdone herself with this practical collection of recipes that emphasize fresh healthy ingredients like fruits, vegetables, and whole grains. There’s also a fair amount of tofu seitan and tempeh recipes, although many of the recipes require no soy. Nava gives helpful tips on menu planning and recipe variations throughout the book, so you can put together a whole meal in not much more time than it takes to make a single recipe. She also includes nutritional breakdowns for those following special diets or trying to shed a few pounds. These are vegan recipes that are easy and accessible for average cooks and omnivores. Those completely new to cooking vegetarian or vegan will find it an especially invaluable guide, but even experienced vegans will appreciate the inspiration of simple healthy satisfying recipes that can put dinner on table in record time.
