Recipe for Banana Poppy Seed Muffins.  These tempting muffins are like banana bread in a smaller more portable package, perfect for lunch boxes or a quick morning snack on the go.  They freeze well too.  This recipe was given to us by our friend friend Brenda Hyde, the editor of OldFashionedLiving.com. Ingredients: 2 medium bananas, peeled
1 egg
3/4 cup sugar
1/4 cup vegetable oil
2 teaspoons grated orange zest
2 cups flour
1 1/2 tablespoons poppy seeds
2 teaspoons baking powder
1/2 teaspoon salt
Instructions: Preheat oven to 375° F.

Purée bananas in blender to make 1 cup of puréed bananas.

In medium bowl, mix bananas, egg, sugar, oil and orange zest until well blended.

In large bowl, combine flour, poppy seeds, baking powder and salt.

Stir banana mixture into flour mixture until evenly moistened. Spoon batter into greased 2 1/2-inch muffin cups.

Bake for 20 minutes or until cake tester comes out clean.

Remove from pan; cool on wire rack. Dip warm tops in sugar.
