Like all the book in the Culinary Institute of America's consumer cookbook series, this one is incredibly well written, photographed, researched and produced. We love all the books in this series. This one, however, takes on a subject that most people need help with. For on things, nearly everyone needs to incorporate more vegetables into their diets for health reasons. Secondly, vegetables are often an afterthought in the typical American diet. This makes them seems less appealing, as who can get excited over the obligatory steamed veggies night after night. With this book at your side, all that's about to change. Not only are there tons of creative side dish recipes, there are also lots of terrific recipes to incorporate more vegetables into your culinary repertoire via soups, salads, main courses, appetizers, and even sauces, pickles and relishes. Most recipes come with full color photos and step by step photos illustrate possibly unfamiliar techniques. A particularly nice artist's touch are the vintage vegetable labels that add splashes to color and whimsy to the informational pages that teach the basics of the different types of vegetables founds in today's overflowing produce markets and how to use them. Don't be intimidated by the fact that this book comes from such a prestigious culinary academy. It is designed for the average home cook. Recipes are so clear and techniques covered so thoroughly that even beginner cooks will get great results. Note: This is a cookbook highlighting vegetables, but this is NOT a vegetarian cookbook.
