| Author Notes: | Here's a martini variation on the classic Bellini cocktail, invented by Giuseppi Cipriani in 1948 at Harry's Bar in Venice. I like to call this drink a Bellinitini. OK, other than the fact that it's peach flavored and it does contain sparkling wine, it doesn't bare a lot of resemblance to the original Bellini, but it's still a mighty fine cocktail. You can serve this in either a champagne flute or a large martini glass |
| Ingredients: |
2 parts peach flavored vodka (we like Absolut®)
1 part peach liqueur 1 part Prosecco, Champagne or dry sparkling wine small squeeze of fresh lemon juice fresh peach slice for garnish (optional) |
| Instructions: |
Pour vodka and peach liqueur into an ice filled cocktail shaker. Shake, then strain into a chilled Champagne flute or martini glass. Top with Champagne. Garnish with fresh peach slice if desired. |
