Author Notes: You will impress your guests more if you can use wild turkey instead of store bought -- wild turkey has more flavor. Ground pork also works well.
Ingredients: 1 pound ground turkey
1 1/2 tablespoons cooking oil
1 1/2 tablespoons cornstarch
1 tablespoon chili powder
1 large clove garlic
2 teaspoons dried oregano
1 can whole or stewed tomatoes
1 cup fresh or frozen corn
1 cup finely chopped zucchini
1/4 cup coarsely chopped sweet white onion
1/4 cup coarsely chopped canned green chiles or bell pepper
1 tablespoon thinly sliced hot peppers or 2 chipotle peppers in adobo sauce
1 cup chicken stock
Instructions:

Using a cast iron or nonstick skillet or pot, sauté the turkey in oil for 2 1/2 to 3 minutes. Add the cornstarch, chili powder, garlic, and oregano; sauté for 2 to 3 minutes. Add vegetables, peppers, broth, then simmer for approximately 5 to 10 minutes. Adjust seasoning to taste and serve immediately.
