Ingredients: 1 large zucchini
1 large yellow squash
1/2 medium onion
1 clove garlic chopped
1/2 cup olive oil
Instructions: Wash and slice the squash and cut up the onion into large chunks. Place in a plastic container (I use a gallon size zippered plastic bag). Add the garlic and the oil and toss together until all pieces are coated. Place in a perforated grill pan on a hot gas grill or 6 -8 inches above hot charcoals. Turn until the squash just begins to brown and is fork tender.

Total carbs =12
2 servings = 6 carbs each
