Author Notes:

Crushed red pepper give an extra bite to roasted bell peppers. Use the peppers in salads, sauces, as a side dish or in our fabulous Goat Cheese, Roasted Pepper and Basil Appetizers.

Ingredients: 6 bell peppers - any combination of red, yellow and green
1/3 cup olive oil
1 tablespoon minced garlic
1/2 - 3/4 teaspoon crushed red pepper
Instructions:

Serves 12 as an appetizer

Roast and peel and seed peppers (see links below for how to instructions). Cut into 1/2" wide strips. Place peppers in a plastic zipper bag and add remaining ingredients. Toss to mix and chill overnight. Serve chilled or at room temperature, add to salads, sandwiches, pizzas or anything else you dream up.
