Author Notes: This versatile recipe is equally at home as a topping for rice or noodles as it is spooned over simply cooked chicken, omelets or pork.
Ingredients: 1/2 pound fresh mushrooms, thickly sliced
3/4 cup onion, finely chopped
3 teaspoons butter
2 cloves garlic, crushed
1 1/2 teaspoons curry powder (more or less to taste)
1/3 cup chicken stock
salt and pepper to taste
Instructions: Sauté mushroom and onion in butter for about 5 minutes. Add garlic and curry powder and cook for 1-2 minutes more (curry powder will darken). Stir in stock and season with salt and pepper to taste. Simmer for 5-8 minutes and serve.
