| Author Notes: | Here's an unusual side dish vegetable recipe using a vegetable that's usually relegated to the crudite platter. It's time to give celery's versatility a chance! |
| Ingredients: |
1 large bunch celery, cut into diagonal 1 pieces
1 small onion, chopped 4 tablespoons butter or margarine 2 tablespoons fresh Italian parsley, finely chopped 2 tablespoons toasted pine nuts salt and pepper to taste |
| Instructions: | Melt butter in saucepan. And add onions and celery, cover and cook over medium heat, shaking pan frequently, until celery is crisp-tender, about 15 minutes. Remove lid, stir in Italian parsley and pine nuts, season with salt and pepper. Serve immediately. |
