| Author Notes: | Kathy, a reader in Washington state shared this simple but delicious recipe with former Camper's Corner editor, the late Bob Carter. The prepared beets are also good when cold or added to green salads. According to Kathy, "This is the only way my 10 and 12 year-old boys will eat beets. They think they're like candy!" We suggest you roast a few extras for later use. Multiply ingredients by number of people being served. |
