Author Notes: Here's an easy way to cook spring's favorite vegetable - so easy you can make it on camping trips. Serve hot off the grill or chilled as a side dish or appetizer.

Asparagus Tip: When buying asparagus, look for firm, bright green spears with tightly closed tips.

Ingredients: 1 pound fresh asparagus
3 tablespoons olive oil
juice of 1 lemon
salt and pepper
Instructions:

Serves 4 as a side dish, 8 as an appetizer

Snap off tough ends of asparagus. Drizzle asparagus with olive oil and grill over medium hot coals until crisp-tender - about two minutes per side. Serve hot or chilled.
