Author Notes: Here's an old fashioned favorite recipe for stuffing for the Thanksgiving or Christmas turkey.

Ingredients: boiling water
1 1/2 pounds chestnuts
1/3 cup butter
1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup dry bread crumbs
1/2 cup milk, scalded
Instructions: Pour boiling water over chestnuts and let stand 5 minutes. Remove the skin with a knife and your fingers. Cook the nuts about 1/2 hour in boiling salted water. Drain, mash and add butter and seasonings. Pour milk over crumbs and add to nut mixture. Mix well.

To stuff a turkey: Fill main turkey cavity and neck cavity with stuffing. Bake remaining dressing in a dish as outlined below.

To Bake dessing in pan: Preheat oven to 350°F. Butter a 15 x 10 inch baking dish. Transfer stuffing to prepared dish. Cover with buttered foil and bake until heated through, about 45 minutes. Uncover and Bake until top is golden brown, about 15 minutes.
