| Ingredients: |
1 small onion, minced
1 cup wild rice 1/4 cup (1/2 stick) calorie-reduced margarine 3/4 teaspoon salt 2 cups water juice and grated zest of 1 large orange 1/2 cup chopped nuts |
| Instructions: |
Sauté the onion and wild rice in the butter in a heavy saucepan for 4 to 5 minutes. Sprinkle with the salt and add the water and orange juice. Bring to a boil. Reduce heat to maintain a simmer and cook, covered, over low heat about 45 minutes, or until rice has just popped. (For a crunchy, nut-like texture, do not overcook rice in this recipe). Fluff rice with a fork and stir in the orange rind and nuts. Serve hot.
