Author Notes: Using your slow cooker for a big holiday meal makes sense, as you'll free up your stove or oven for other uses. Here's an elegant alternative to stuffing that's easily prepared in your slow cooker.
Ingredients: 1 1/2 cups uncooked long-grained rice
1/2 cup uncooked wild rice
1 envelope dry onion soup mix
4 cups water
1 bunch green onions, chopped
8 ounces sliced mushrooms
1/4 cup melted butter

Optional:
1 tablespoon snipped parsley
Instructions: Combine all ingredients in lightly greased slow cooker. Cover, cook on high for about 2 1/2 hours, stirring occasionally. Stir in parsley just before serving.
