This recipe was given to us by Donna Flanders who, with her husband Harvey, co-owns RV Vacation Planner, a service that offers custom RV vacation plans including trip routing, campground research, activity research, and itinerary, each based on the individual customer's requirements. Even though Donna came up with this recipe as part of an article she did for us on RV Cooking without Hookups (see related links below), it's also delicious prepared at home or over a campfire or any time you get the opportunity to cook outdoors. |
| Ingredients: |
2-3 medium potatoes sliced into thin wedges
1 small onion, thinly sliced 1/4 cup olive oil garlic salt ground black pepper, parsley and dill to taste |
| Instructions: | Take a 24 inch length of heavy aluminum foil (or a double layer of regular). Spread the olive oil on it. Sprinkle with the spices. Scatter the onion slices next, then the potatoes. Fold the ends together and seal well. Place on a grill over medium heat for about 30-45 minutes, turning every 15 minutes. |
