Author Notes: These Halloween Mummies made from mashed potatoes are easy to make and are a fun and tasty side dish for kids of all ages. Thanks to the Idaho Potato Commission for sharing this clever idea with us.
Ingredients: 1/2 cup mashed potatoes (see links below for recipes)

Recommended Vegetables:
peas carrots for eyes
herbs for eyelashes
black olive slices for eyebrows
corn kernels for ears
sliced radishes and olive halves for shoes

Additional Suggestions:
red, yellow, green bell pepper slices
sugar snap peas
cucumbers
green beans
zucchini
eggplant

Optional:
corn husks, fresh or packaged
Instructions:

Note: The cornhusks are used to enhance the visual appearance of this dish and are NOT edible. You can also make this dish by omitting the corn husks.

Prepare mashed potatoes using your favorite recipe, or click here for ours.

Place an unopened cornhusk on a plate and put a large dollop (about 3/4 cup) in the center of the husk. Gently mold potatoes into the oblong shape of a mummy. Select vegetables to create the mummy's features and choose the approximate location of where to place. Carefully press the vegetables into the potatoes. Serve immediately.
