Author Notes: Using your slow cooker for a big holiday meal makes sense, as you'll free up your stove or oven for other uses. How easy is this potato side dish? Well, let's see. There's no peeling, chopping, dicing, slicing or whipping required! That's pretty easy! Delicious too!
Ingredients: 4 pounds new red potatoes, unpeeled
2 tablespoons olive oil
1 envelope dry zesty Italian dressing mix
Instructions: Combine oil and potatoes in slow cooker; stir to coat. Sprinkle with salad dressing mix and stir until all potatoes are evenly coated. Cover and cook on low 8 hours until potatoes are fork-tender.
